Perfecting the art of bread making is no small feat, so don’t be discouraged if your first, second, or even third attempt doesn’t go as planned. One of the most crucial stages is the overnight proofing. During this time, the yeast works its magic, releasing carbon dioxide and creating those delightful air pockets that give bread its light and airy texture.

Once the dough has completed its proofing, it’s time for the final shaping and scoring. This step is essential, as it influences how the loaf will look once it’s risen. At Flour Water Salt, we embrace simplicity with a classic one-line score on our sourdoughs, celebrating the beauty of minimalism.

You might catch our youngest baker, Kyra, showcasing her skills on our social media! She’s been shaping and scoring a variety of breads to perfection, and her enthusiasm is truly infectious.

When it comes to experimenting with flavour, timing and temperature are key. For instance, our latest seasonal creation features the ‘Crown Prince Squash’ from Pye Ash Farm. This squash must be roasted and chilled before mixing to enhance its flavour. Additionally, when pairing it with cheddar, it’s crucial that both ingredients are at room temperature to ensure the dough stays warm and responsive.
