Recommended Baking Book: The Waitress Pie Book

This autumn, my recipe of choice is Dark Chocolate Pie! My love for pies runs deep, and I have a personal connection to this recipe. During the pandemic, I received a wonderful baking book for my birthday, inspired by the musical Waitress. The story follows a young mother-to-be who channels her experiences and challenges into her exceptional baking, particularly her pies. This resonated with me during such a difficult time, and I soon found myself diving into the world of baking, experimenting with a variety of pie recipes.

Some of my favourites from the book include the delightful “Life’s Just Peachy Keen Polka Dot Peach Pie,” the refreshing “Big Guy Strawberry Pie,” and the indulgent “Candy Gold Apple Pie” from the fruit pie section. There are also enticing sections dedicated to savoury pies and chocolate creations!

This month’s featured recipe comes straight from The Waitress Pie Book. It even teaches you how to make your own pie crust, although you can easily opt for store-bought pastry for convenience. As the nights grow colder and darkness descends earlier, I’m excited to share the aptly named “In the Dark Dark Chocolate Pie.” With its creamy, soft filling and rich chocolate base, this dessert is the perfect treat for cosy evenings by the fire. You’ll be left wanting more as you indulge in this luscious chocolate delight!
